


VANILLA CUPCAKES
Ingredients...
6oz Margarine
6oz Caster Sugar
6oz Self-Raising Flour
3 eggs
1/2tsp vanilla essence
1/2tsp baking powder

What to do...
Preheat the oven to 180°C. Line a baking tray with 12 cupcake cases.
Measure out the butter and sugar into a bowl, and cream it together using a hand-held mixer until light and fluffy.
Add the eggs one at a time- mixing well after adding each one- before adding the flour and the baking powder.
Mix it all together with the beaters until it all looks light and fluffy, before adding a dash of the vanilla essence.
Once all mixed thoroughly, spoon into cupcake cases (fill the cases about 2/3 of the way) careful not to beat the air out of the cake mix as you spoon it out.
Put them in the oven for 15-20 mins until a light brown colour. When finished, remove from oven and leave to cool for a few moments, before taking the cupcakes out of the tray and placing them on a cooling rack.
