Banana loaf
Ingredients...
2 ripe bananas
50g margarine
150g caster sugar
2 beaten eggs
225g self-raising flour

What to do…
Grease and flour a loaf tin. Set oven to 190°C/375F/ gas 5.
Mash bananas on a plate, then cream the margarine and sugar using handheld beaters.
Beat the eggs using a fork, and then beat them into the margarine mix.
Gradually add the flour, bananas and a pinch of salt. At this stage, you can add extras such as sultanas or chocolate chips if you fancy!
Once well mixed, put into the loaf tin. Sprinkle the top of the loaf with demerera sugar (this allows for a crisp sugary top to the loaf).
Bake it for approximately 1-1.5 hours until golden, and just shrunk away from the sides of the tin.
Turn out onto a wire rack and allow to cool.
