Banana loaf

Ingredients...

2 ripe bananas

50g margarine

150g caster sugar

2 beaten eggs

225g self-raising flour

Salt

What to do…

  • Grease and flour a loaf tin. Set oven to 190°C/375F/ gas 5.

  • Mash bananas on a plate, then cream the margarine and sugar using handheld beaters.

  • Beat the eggs using a fork, and then beat them into the margarine mix.

  • Gradually add the flour, bananas and a pinch of salt. At this stage, you can add extras such as sultanas or chocolate chips if you fancy!

  • Once well mixed, put into the loaf tin. Sprinkle the top of the loaf with demerera sugar (this allows for a crisp sugary top to the loaf).

  • Bake it for approximately 1-1.5 hours until golden, and just shrunk away from the sides of the tin.

  • Turn out onto a wire rack and allow to cool.
