Chocolate Chip Cookies
In my experience, these turn out best when the dough is cooked from frozen.
Really easy to make a batch to freeze and bake fresh when desired!
Ingredients...
250g plain flour
2g baking powder
170g unsalted butter (melted)
220g light brown soft sugar
100g caster sugar
15ml vanila extract
1 egg
1 egg yolk
335g chocolate chips
Pinch of salt
Method...
1. Preheat the oven to 325 degrees Fahrenheit / 165 degrees Celsius. Grease 2 baking sheets and line with greaseproof paper.

2. Sift the flour and baking soda into a bowl, then add the salt and set aside.

3. In another bowl, mix together the melted butter, brown sugar and caster sugar. Beat in the egg, egg yolk and vanilla until light and creamy. Then mix in the dry ingredients (measured previously). Stir in the chocolate chips using a wooden spoon.

4. At this stage, you have a couple of options. You can split the cookie dough into 3 balls (1 ball = approx 4 cookies) and freeze.
Alternatively you can put dollops of cookie dough (approx 2 tbsp per drop) on the baking sheet, leaving plenty space in between, and bake in the oven for 15 ish minutes, until the edges are lightly toasted. Cool on the baking sheet for a few moments before moving to a wire cooling rack to cool completely.
