Rolo Rocky Road Fudge

Ingredients: 

  • 200g condensed milk 

  • 200g milk chocolate chips or chopped chocolate

  • 13g butter

  • 1/2 tsp vanilla extract

  • 63g icing sugar

  • 63g mini marshmallows

  • 63g digestive biscuits

  • 52g pack of rolos

What to do: 

1. Line a tin or dish with greaseproof paper. I use my Le Creuset 10 x 6" dish. 

2. Put the chocolate, condensed milk, vanilla extract and butter in a heavy based pan, and put it on a low heat. Stir until melted. 

3. Once melted, sift in the icing sugar and mix thoroughly. 

4. Break up the digestive biscuits and cut up the rolos into halves or quarters 

5. Once cooled, add the marshmallows, broken digestives and rolos -  remember to save a few for the top!

6. Mix well and press into tin, smoothing over. Add the remaining bits of rolos, marshmallows and biscuit. Then store in the fridge for 3-4 hours to set.

7. Once set, remove from the tin and cut into squares.

This recipe is brilliant for customising to your own tastes. You can add a variety of ingredients to this, including glace cherries, pistachios, crunchie bars etc. 

​

These quantities made approx 18 square bits of fudge. For some, using the full tin of condensed milk makes more sense. If this is you , just double the recipe! Just note, you will end up with ~36 squares of delicious chocolatey fudge.
