
Chocolate Brownie
Ingredients...
100g softened unsalted butter
200g dark chocolate (I tend to use half and half between milk and dark chocolate)
250g caster sugar
4 large free-range eggs
1tsp vanilla extract
60g plain flour
60g cocoa powder

Method...
Preheat the oven to 180°C/ fan 160°/ gas 4 and grease and base-line a 20.5cm x 25.5cm brownie or baking tin
Put the chocolate in a heatproof bowl and melt slowly over a pan of gently simmering water. Remove the bowl from the heat and leave to cool slighly.
Beat the butter and sugar in a food mixer until fluffy. Gradually beat in the eggs one by one, and add the vanilla.
Add the melted chocolate and mix well. Sift the flour and cocoa over the mixture and gently stir in. Spoon the mixture into a baking tin and spread evenly.
Bake for 20 mins until firm but fudgy.
Put on a wire cooling rack to cool before cutting into pieces.
